Because Sokka totally ships them.

1. "That gloomy girl who sighs a lot?" The way he said it...totally impressed. And it made him compare her to Yue right afterwards. Yeah. He views Mai's relationship with Zuko in a similar way to his own relationship with his lunar love.
2. He watched Mai fight to save her boyfriend at the prison, and she saved all their lives there at the cost of her own freedom (and, for all he knew, her life). Self-sacrificing girlfriends? Yeah, that's another Yue connection.
3. He drew them together in the foreground of his final picture. A grumpity-looking couple, but it's fun to be grumpy together. And he loves the gloomy-girl aspect mixed with Zuko's angry-jerk-ness.

And like he said, they're awesome together.
